Quick Roasted Artichoke Dip

1 c. grated good quality Parmesan
4 oz. cream cheese, room temp.
½ c. Miracle Whip or mayo
¼ c. sour cream
2 T. lemon juice
Zest of 1 lemon
3 (9-oz.) boxes frozen artichokes, thawed, drained and chopped
2 T. minced garlic
1 (4.5-oz.) can diced green chiles
1 c. shredded white cheddar
Crackers or chips for dipping

  1. Preheat oven 375.
  2. Combine Parmesan, cream cheese, mayo, sour cream, lemon juice and zest, artichokes, garlic and chilies in large mixing bowl.
  3. Mix completely and spread evenly in shallow 1-quart baking dish.
  4. Top with white cheddar.
  5. Bake until bubbling and top starts to brown in spots, about 30 minutes.
  6. Serve warm with favorite crackers or chips.
