Amazing Oysters Rockefeller Spinach Dip
AMAZING OYSTERS ROCKEFELLER SPINACH DIP
1 T. butter
8 ozs. Shucked oysters (about 24), drained
1 c. Miracle Whip or mayo
4 oz. cream cheese, softened
1 (10-oz.) pkg. frozen chopped spinach, thawed and squeezed dry
1 c. shredded Parmesan cheese
1 T. Anise Liqueur, or to taste
1 t. Worcestershire sauce
1 t. fresh lemon juice
½ t. garlic powder
Tabasco to taste
¼ c. panko bread crumbs
Toasted baguette slices, to serve
- Preheat oven 350. Lightly spray a small baking dish with PAM.
- In skillet, melt butter over medium heat.
- Add oysters, cook 1 minute.
- With slotted spoon, remove oysters and set aside.
- In bowl, beat mayo and cream cheese with hand mixer at medium speed until well combined.
- Stir in spinach, Parmesan, liqueur, Worcestershire, lemon juice, garlic powder and Tabasco.
- Gently fold in oysters. Spoon into prepared pan.
- Sprinkle with bread crumbs on top.
- Bake until bubbly, about 30 minutes.
- Serve on baguette.
