Fancy Spinach-Artichoke Fondue

2 c. shredded fontina cheese
¼ c. shredded Asiago
1 T. cornstarch
2 T. butter
5 oz. frozen spinach, thawed and squeezed dry
1 T. minced garlic
1 t. red pepper flakes
1 t. anchovy paste
½ t. freshly grated nutmeg
½ c. dry white wine
½ c. chicken broth
4 oz. cream cheese, cubed and softened
½ c. chopped caned artichoke bottoms, drained
1 T. lemon juice
Salt/black pepper to taste
Crusty bread cubes or veggies, for dipping

  1. Toss together fontina, Asiago and cornstarch.
  2. Melt butter in saucepan over medium heat.
  3. Add spinach, garlic, pepper flakes, anchovy paste and nutmeg. Cook until garlic is softened, about 1-2 minutes.
  4. Add wine and broth. Bring to a simmer.
  5. Whisk in cheese mixture a handful at a time, letting each addition fully melt before adding the next.
  6. Whisk in cream cheese until melts.
  7. Stir in artichokes and lemon juice.
  8. Season and transfer to warm fondue pot.
