Ingredients
  • 1 c. unbleached all-purpose flour
  • 4 ½ T. almond meal
  • 2 T. sugar, divided
  • ⅜ t. salt
  • 7 T. cold butter, cubed
  • 3 T. canola oil
  • 3 T. ice water
  • 1 lb. fresh Black Mission or Brown Turkey figs, stemmed and quartered lengthwise
  • 2 t. lemon juice
  • 1 T. slice almonds, toasted
Instructions
  1. Place flour, almond meal, 1 T. sugar and salt in food processor. Pulse to combine.
  2. Scatter butter into processor and pulse until mixture resembles coarse meal.
  3. Drizzle in oil, pulse to combine.
  4. Add ice water, pulse just until combined.
  5. Turn mixture out onto a sheet of plastic wrap, pat into a disc. Wrap and refrigerate for 1 hour.
  6. Preheat oven 400.
  7. Place figs in large bowl. Sprinkle with remaining sugar and lemon juice. Gently toss to combine.
  8. Unwrap dough. Roll dough into 12” circle.
  9. Arrange dough on baking sheet lined with parchment paper.
  10. Spoon figs onto dough, leaving 2” border.
  11. Fold edges of dough over filling to partially cover.
  12. Bake for 35 minutes or until fruit juices bubble and crust is browned.
  13. Remove from oven, sprinkle with almonds and cut into wedges.
