Wonderful Roasted Squash

1 lb. fresh butternut squash
Olive oil
Kosher salt/black pepper
Few sprigs of thyme
Few bay leaves
1-2 T. butter

  1. Heat oven to 400.
  2. Slice squash into 3/8” half-moons.
  3. Toss with olive oil.
  4. Arrange in slightly overlapping rows on a baking sheet that is lined with parchment paper.
  5. Sprinkle with salt and pepper.
  6. Scatter the sprigs of thyme and bay leaves.
  7. Dot with butter.
  8. Bake and turn halfway through roasting, until squash is soft and slightly candied brown edges, 30 minutes total cooking time.
  9. Taste for additional seasoning.
