Watermelon Tequila Cocktail
Ingredients
- ¼ c. water
- ¼ c. granulated sugar
- I c. diced seedless watermelon (about 1 lb.)
- ¼ c. fresh lime juice
- 1 ¾ c. blueberries
- ¾ c. lightly packed fresh mint and sprigs for garnish
- 1 ¼ c. silver tequila
- Ice cubes
Instructions
- In small saucepan, bring water to simmer with sugar and stir over medium heat until sugar dissolves, about 1 minute. Let cool.
- In a blender, puree watermelon until smooth. Set a fine mesh strainer over a bowl and strain the watermelon juice, pressing gently on solids to extract as much juice as possible. Discard pulp.
- In pitcher, combine sugar syrup with lime juice, blueberries and mint leaves. Lightly muddle the berries and mint.
- Add the watermelon and tequila. Refrigerate until chilled—about 2-3 hours.
- Pour into tall ice-filled glasses and garnish with mint sprig.
