Watermelon Tequila Cocktail

Ingredients
  • ¼ c. water
  • ¼ c. granulated sugar
  • I c. diced seedless watermelon (about 1 lb.)
  • ¼ c. fresh lime juice
  • 1 ¾ c. blueberries
  • ¾ c. lightly packed fresh mint and sprigs for garnish
  • 1 ¼ c. silver tequila
  • Ice cubes
Instructions
  1. In small saucepan, bring water to simmer with sugar and stir over medium heat until sugar dissolves, about 1 minute. Let cool.
  2. In a blender, puree watermelon until smooth. Set a fine mesh strainer over a bowl and strain the watermelon juice, pressing gently on solids to extract as much juice as possible. Discard pulp.
  3. In pitcher, combine sugar syrup with lime juice, blueberries and mint leaves. Lightly muddle the berries and mint.
  4. Add the watermelon and tequila. Refrigerate until chilled—about 2-3 hours.
  5. Pour into tall ice-filled glasses and garnish with mint sprig.
