Versatile Tuna Reuben with Mustard Slaw

2 T. whole grain mustard
1 T. sour cream
1 T. white wine vinegar
1 T. honey
1 T. prepared horseradish
1 c. coleslaw mix
3 T. chopped green onions
Salt, black pepper to taste

  1. Whisk together mustard, sour cream, vinegar, honey and horseradish.
  2. Add slaw and green onions.
  3. Toss to coat and season to taste.
    2 (6-oz.) tuna fillets, seasoned with salt and black pepper and coated with PAM
    2 T. butter, divided
    4 slices seeded rye bread
    4 slices Swiss cheese
  4. Sear tuna over medium-high heat on large nonstick skillet until medium-rare, 2-3 minutes per side.
  5. Remove tuna from skillet, let rest 2-3 minutes.
  6. Slice tuna into strips.
  7. Reduce heat to medium.
  8. Melt 1 T. butter in skillet.
  9. Add 2 slices bread and top each with cheese.
  10. Place tuna on top of cheese, then top with slaw and remaining bread.
  11. When bottom bread is toasted, add 1 T. remaining butter to skillet.
  12. Flip sandwich and cook until toasted, 2 more minutes.
  13. Serve immediately.
