Velvety Black Bean Brownies

1 (15-oz. can) black beans, rinsed and drained
½ c. semisweet chocolate chips, divided
3 T. canola oil
3 eggs
2/3 c. packed brown sugar
½ c. baking cocoa
1 t. vanilla
½ t. baking powder
1/8 t. salt

  1. Place beans, ¼ c. chips and canola oil in food processor.
  2. Process until blended.
  3. Add eggs, brown sugar, cocoa, vanilla, baking powder and salt.
  4. Process until smooth.
  5. Transfer to a parchment paper lined 8” baking pan.
  6. Sprinkle with remaining chips.
  7. Bake 350 for 20-25 minutes or until toothpick inserted in center comes out clean.
  8. Cool on wire rack.
  9. Cut into bars.
