Velvety Black Bean Brownies
VELVETY BLACK BEAN BROWNIES
1 (15-oz. can) black beans, rinsed and drained
½ c. semisweet chocolate chips, divided
3 T. canola oil
3 eggs
2/3 c. packed brown sugar
½ c. baking cocoa
1 t. vanilla
½ t. baking powder
1/8 t. salt
- Place beans, ¼ c. chips and canola oil in food processor.
- Process until blended.
- Add eggs, brown sugar, cocoa, vanilla, baking powder and salt.
- Process until smooth.
- Transfer to a parchment paper lined 8” baking pan.
- Sprinkle with remaining chips.
- Bake 350 for 20-25 minutes or until toothpick inserted in center comes out clean.
- Cool on wire rack.
- Cut into bars.
