Wonderful Fresh Corn Salad
WONDERFUL FRESH CORN SALAD
6-8 fresh ears of corn, shucked
olive oil
½ red onion, finely chopped
2 c. fresh cherry tomatoes, halved
1 avocado, rough chop
1 c. fresh baby spinach, rough chop
DRESSING:
4 T. olive oil
6 T. apple cider vinegar
1 t. sugar
1 t. Dijon mustard
Zest of 1 lime
Juice of 1 lime
Salt/black pepper to taste
- In a bowl, combine all dressing ingredients. Whisk and set aside.
- In a large skillet add a couple of inches of water and bring to a boil.
- Add the shucked corn cobs to the water and cook 3-5 minutes. Rotating the ears, constantly.
- Drain and set aside.
- Heat a grill.
- Brush corn with olive oil and grill until nicely golden on all sides.
- Once corn is cooled, cut corn off the cob and add to a bowl.
- Add the red onion, cherry tomatoes, avocado and spinach. Mix well.
- Drizzle with the dressing and mix. Taste for seasoning.
*You may not use all dressing. Save in refrigerator as a marinate or other salads.
