Tantalizing Grilled Veggie Orzo Pasta Salad

1 ½ c. uncooked orzo pasta
1 pt. cherry tomatoes, halved
1 T. minced garlic
Olive oil spray
1 red onion, quartered
1 red bell pepper; 1 yellow bell pepper (seeded, sliced into chunks)
1 large zucchini, sliced into thick rounds
Kosher salt/black pepper
2 T. apple cider vinegar
2 T. red wine vinegar
5 T. extra virgin olive oil
¼ c. chopped fresh basil, garnish
Freshly grated Parmesan cheese, garnish

  1. Cook orzo according to package directions. Drain and rinse under cold water.
  2. Transfer to large bowl and add tomatoes, 2 T. oil and garlic.
  3. Spray onions, bell peppers and zucchini with olive oil spray and season with salt and pepper.
  4. Place veggies in grill basket and cook until lightly charred and tender. Turning halfway. Usually takes 10-12 minutes.
  5. Set veggies on a cutting board and let cool slightly. Dice into ½” pieces.
  6. Mix with the orzo. Toss in remaining olive oil and vinegars and season to taste.
  7. Garnish with fresh basil and parmesan, if desired.
