Unbelievable Chocolate Stout Cake

1 ½ c. Stout beer
½ c. heavy cream
½ c. plus 2 T. sugar
1 ¼ c. semisweet chocolate chips
4 eggs
1 T. vanilla
4 c. French Bread with crust, cut into 1” cubes or brioche bread
Whipping cream or Cool Whip, to serve

  1. Preheat oven 325.
  2. In saucepan, add Stout, cream and ½ c. sugar and let simmer, stirring until sugar dissolves.
  3. Remove from heat.
  4. Add 1 c. chocolate chips and whisk until melted and smooth. Set aside to cool.
  5. Whisk eggs and vanilla in large bowl to blend.
  6. Gradually whisk in cooled chocolate mixture.
  7. Add bread cubes and remaining chocolate chip and toss to coat.
  8. Transfer to 1 ½ quart shallow baking dish that is greased with butter or oil
  9. Sprinkle 2 T. sugar over top.
  10. Bake until custard thickens or center is just set, about 50-60 minutes.
  11. Serve warm, cut a circle using round biscuit cutter.
  12. Garnish with Cool whip and sprinkle of sugar, if desired.
