Sweet and Sour Slaw

SWEET AND SOUR SLAW
1 lb. bag slaw mix
3 celery stalks, thinly sliced
1 red onion, diced
1 green, orange, red bell pepper, seeded and diced
1 jalapeno, seeded and diced
½ c. Jalapeno Sweet Spicy Relish
½ c. sugar
½ c. olive oil
½ c. cider vinegar
½ c. champagne vinegar
1 T. Creole mustard
1 T. celery seeds
Salt/black pepper to taste

  1. In large bowl, combine cabbage, celery, onion, bell peppers, jalapenos, jalapeno relish, and sugar. Toss to mix and set aside.
  2. In saucepan over medium heat, combine oil, vinegars, salt and pepper, mustard and celery seeds. Stir to mix well.
  3. Pour over cabbage mixture and toss to mix well.
  4. Cover and refrigerate overnight, stir from time to time. Taste for seasoning.
