Surprising Cauliflower Potato Salad
Ingredients
- 1 head of fresh cauliflower, cut into pieces
- Kosher Salt, black pepper
- Olive oil
- ½ c. Greek yogurt
- 1 T. Dijon mustard
- 1 T. honey
- 3 T. chopped dill
- 1 T. olive oil
- 2 T. minced garlic
- ½ c. fresh lemon juice
- 3 boiled eggs, chopped
- ½ red onion, chopped
- 3 stalks celery, chopped
Instructions
- Place foil on a baking sheet and spray with PAM.
- Spread the cut cauliflower onto the baking sheet.
- Drizzle melted butter all over the cauliflower and season with salt and pepper.
- Bake at 400 for 20 minutes or until crispy tender.
- In a bowl combine, yogurt, mustard, honey, dill, oil, garlic and lemon juice. Set aside.
- In a bowl, combine the baked cauliflower with the chopped eggs, red onion and celery. Mix well.
- Gradually add in the yogurt dressing. Mixing as you go.
- Season to taste.
- Garnish with extra chopped dill.
Notes
*****I thought it was quite good. I could easily accept this in place of potato salad. If there are certain spices you rather go ahead and sub them for what you do not like.
