Snappy Street Corn Salad

½ c. chopped fresh cilantro or parsley
¼ c. fresh lime juice
Kosher salt/black pepper
3 T. olive oil
4 c. fresh corn kernels
1 c. thinly sliced radishes
1 c. cherry tomatoes, halved
½ c. crumbled Cotija or Feta Cheese
Tabasco to taste

  1. Combine the cilantro, lime juice, salt and pepper.
  2. Whisk in olive oil.
  3. Mix together the corn, radishes and tomatoes in a bowl.
  4. Gently stir in dressing.
  5. Taste for seasoning. Add Tabasco if you want a little kick.
  6. Place in serving dish and top with cheese.
