Simple Sloppy Joe Casserole Sandwiches

4 T. butter, divided
2 large carrots, peeled and grated
½ onion, diced
1 green bell pepper, fine chop
4 T. minced garlic
2 ½ lbs. ground beef
1 ½ c. catsup
2 T. brown sugar
1 T. chili powder
1 t. dry mustard
2 c. beef stock
2 T. tomato paste
2 T. Worcestershire sauce
Salt/pepper to taste
Tabasco, if desired
12 slider rolls
Everything Bagel Seasoning or Sesame seeds, garnish

  1. Preheat oven 375.
  2. Place 2 T. butter in large skillet over medium heat. Once butter melted, add carrot, onion and bell pepper and cook until slightly softened.
  3. Add garlic and cook 1 more minute.
  4. Add beef, breaking up into little pieces and cook until no pink remains.
  5. Drain off excess fat or liquid.
  6. Add catsup, brown sugar, chili powder, dry mustard, beef stock, paste, Worcestershire, salt and pepper. Stir to combine and simmer for 5 minutes. Add Tabasco if desired.
  7. Transfer to 9×13” casserole dish.
  8. Melt remaining butter.
  9. Nestle slider rolls (tops/bottoms, together) into the sloppy joe mixture and brush all over with melted butter.
  10. Sprinkle tops with bagel seasoning or sesame seeds.
  11. Bake 8-10 minutes until tops are toasty.
  12. Serve in bowls.
