Quick Roasted Artichoke Dip
QUICK ROASTED ARTICHOKE DIP
1 c. grated good quality Parmesan
4 oz. cream cheese, room temp.
½ c. Miracle Whip or mayo
¼ c. sour cream
2 T. lemon juice
Zest of 1 lemon
3 (9-oz.) boxes frozen artichokes, thawed, drained and chopped
2 T. minced garlic
1 (4.5-oz.) can diced green chiles
1 c. shredded white cheddar
Crackers or chips for dipping
- Preheat oven 375.
- Combine Parmesan, cream cheese, mayo, sour cream, lemon juice and zest, artichokes, garlic and chilies in large mixing bowl.
- Mix completely and spread evenly in shallow 1-quart baking dish.
- Top with white cheddar.
- Bake until bubbling and top starts to brown in spots, about 30 minutes.
- Serve warm with favorite crackers or chips.
