Lemony Mushroom Ravioli
LEMONY MUSHROOM RAVIOLI
1(16-18-oz.) package of Giovanni Roma RANA Mushroom Ravioli, or your favorite brand
Salt
Olive oil
2 large lemons
4 T. good quality olive oil
4 T. olive oil infused butter
Salt/black pepper
Chopped fresh chives
- In a small sauce pan, melt the butter and add the olive oil.
- Zest the two lemons, salt, black pepper (to taste) and place in saucepan.
- Add the juice of the two lemons into the saucepan.
- Simmer for 1-2 minutes and set aside.
- In a large pot of salted boiling water, add 2 T. olive oil and follow directions on package of pasta and cook.
- Drain and place back into the pot.
- Add the warmed lemon zest sauce to the pasta and stir gently to cover all the pasta.
- Place in your serving dish or platter and garnish with chopped chives.
