Ingredients
  • Olive oil
  • 1 small Vidalia onion, diced
  • 2 T. minced garlic
  • 1 lb. orzo pasta
  • 2 c. chicken or veggie broth
  • 2 c. whole milk
  • 2 c. packed fresh baby spinach, coarsely chopped
  • 1 c. freshly grated Parmesan cheese, plus more for serving
  • Salt, black pepper
Instructions
  1. In large Dutch oven, drizzle olive oil to cover bottom and put over medium-high heat.
  2. Add onion and saute for about 2-3 minutes.
  3. Add garlic and orzo, season with salt and pepper, saute for 1-2 minutes.
  4. Stir in broth and milk and bring to boil.
  5. Cover, reduce to simmer and cook pasta to al dente, stirring occasionally, until most of liquid is absorbed and has formed a creamy sauce for pasta, about 8-10 minutes. If your pasta is not completely cooked once the liquid has been absorbed, add a splash or two of more broth and continue to simmer until pasta is al dente.
  6. Stir in spinach and cheese, stir until spinach wilts and cheese melts, about 1-2 minutes.
  7. Taste for seasoning.
  8. Serve and garnish with additional parmesan cheese.
