1 c. freshly grated Parmesan cheese, plus more for serving

Instructions
In large Dutch oven, drizzle olive oil to cover bottom and put over medium-high heat.
Add onion and saute for about 2-3 minutes.
Add garlic and orzo, season with salt and pepper, saute for 1-2 minutes.
Stir in broth and milk and bring to boil.
Cover, reduce to simmer and cook pasta to al dente, stirring occasionally, until most of liquid is absorbed and has formed a creamy sauce for pasta, about 8-10 minutes. If your pasta is not completely cooked once the liquid has been absorbed, add a splash or two of more broth and continue to simmer until pasta is al dente.
Stir in spinach and cheese, stir until spinach wilts and cheese melts, about 1-2 minutes.
Taste for seasoning.
Serve and garnish with additional parmesan cheese.
