Delicious and Creamy Spinach Parmesan Orzo
Ingredients
- Olive oil
- 1 small Vidalia onion, diced
- 2 T. minced garlic
- 1 lb. orzo pasta
- 2 c. chicken or veggie broth
- 2 c. whole milk
- 2 c. packed fresh baby spinach, coarsely chopped
- 1 c. freshly grated Parmesan cheese, plus more for serving
- Salt, black pepper
Instructions
- In large Dutch oven, drizzle olive oil to cover bottom and put over medium-high heat.
- Add onion and saute for about 2-3 minutes.
- Add garlic and orzo, season with salt and pepper, saute for 1-2 minutes.
- Stir in broth and milk and bring to boil.
- Cover, reduce to simmer and cook pasta to al dente, stirring occasionally, until most of liquid is absorbed and has formed a creamy sauce for pasta, about 8-10 minutes. If your pasta is not completely cooked once the liquid has been absorbed, add a splash or two of more broth and continue to simmer until pasta is al dente.
- Stir in spinach and cheese, stir until spinach wilts and cheese melts, about 1-2 minutes.
- Taste for seasoning.
- Serve and garnish with additional parmesan cheese.
