Crispy Tomato and Baguette Tart

2 T. butter
2 T. olive oil
1 t. minced garlic
Salt, black pepper, red pepper flakes to taste
15 slices Italian baguette, cut ¼” thick
15 (1/4”) slices of red heirloom tomatoes
15 (1/4”) slices of yellow heirloom tomatoes
Olive oil
1 c. shredded parmesan cheese
1 T. olive oil
1 (3-oz.) pkg. prosciutto, diced
Fresh basil leaves

1. Preheat oven 425.
2. Melt butter with 2 T. olive oil and garlic in microwave.
3. Season with salt, black pepper and red pepper flakes.
4. Brush butter mixture on one side of baguette slices.
5. Season tomatoes with salt.
6. Alternate layer baguette slices, buttered sides up, red tomatoes and yellow tomatoes in a 10-11” round glass or ceramic tart pan.
7. Drizzle the tart with oil and sprinkle with parmesan cheese.
8. Bake tart until cheese and baguette slices are browned, about 20 minutes.
9. Heat 1 T. oil in a skillet while baguette is baking.
10. Add prosciutto and cook until crisp, drain on paper towel.
11. Garnish tart with prosciutto and basil.
