Creamy 7-Can Soup

1 can meat only chili-your choice
1 (15-oz.) can kidney beans
1 (15-oz.) can pinto beans
1 (15-oz.) can black beans
1 (15-oz.) can diced tomatoes
1 (15-oz.) can Fiesta corn
1 )10-oz.) can Rotel
Salt/pepper to taste
8 oz. Velveeta, cubed
Chopped fresh jalapenos, sliced avocados, cilantro, optional for garnish

  1. In large pot, without draining the cans, empty the chili, beans, tomatoes, corn and Rotel and place over high heat.
  2. Bring to boil, reduce heat and simmer for 10-15 minutes to bring flavors together.
  3. Taste for seasonings.
  4. Add the cubed cheese and stir into soup until melted.
  5. Serve immediately.
    *You can change up the cheese, add Spanish rice, etc.
