Ingredients
  • 4 oz. cream cheese, softened
  • 4 green onions, sliced
  • 1 (10-oz.) pkg. frozen chopped spinach, thawed, squeezed dry
  • 6 slices bacon, cooked, crumbled
  • 3 T. flour
  • 4 eggs, beaten
  • 4 oz. velveeta cheese, cut into 12 cubes
  • Tabasco
  • salt
Instructions
  1. Heat oven 350.
  2. Mix cream cheese and onions in a bowl.
  3. Add spinach, bacon and flour. Mix well.
  4. Stir in eggs.
  5. Add Tabasco and salt to taste.
  6. Spoon into 12 greased and floured muffin pan cups.
  7. Top each with 1 velveeta cube of cheese and press gently into the center of filling.
  8. Bake 20 minutes or until centers are set and tops are golden brown.
  9. Serve warm or chilled.
Notes
*****If you want to make mini-bites: use 24 greased and floured miniature muffin pan
cups. Cut cheese into 24 cubes. Bake 14-16 minutes.
Can be frozen and reheated after cooked.
