Comforting Funeral Potatoes

30 oz. frozen hash brown potatoes (diced or shredded), thawed
2 c. sour cream
1 (10.5-oz.) can cream of chicken soup
10 T. butter, divided, melted
Salt/black pepper
1 T. minced dried onion
2 c. shredded cheddar cheese
2 c. corn flakes cereal

  1. Using a mixing bowl, thaw potatoes overnight in refrigerator.
  2. Preheat oven 350.
  3. In another bowl, combine soup, sour cream, 6 T. melted butter, pepper and salt. Mix well.
  4. Next, add the thawed potatoes and shredded cheese in the bowl. Mix well.
  5. Once combined, transfer potato mixture evenly into a single layer in 9×12” baking sheet.
  6. In a ziplock bag, lightly crush cornflakes with hands or rolling pin.
  7. Add the remaining melted butter to the cereal. Mix well.
  8. Sprinkle evenly over the potatoes.
  9. Bake uncovered at 350 for 40-50 minutes.
