Comforting Funeral Potatoes
COMFORTING FUNERAL POTATOES
30 oz. frozen hash brown potatoes (diced or shredded), thawed
2 c. sour cream
1 (10.5-oz.) can cream of chicken soup
10 T. butter, divided, melted
Salt/black pepper
1 T. minced dried onion
2 c. shredded cheddar cheese
2 c. corn flakes cereal
- Using a mixing bowl, thaw potatoes overnight in refrigerator.
- Preheat oven 350.
- In another bowl, combine soup, sour cream, 6 T. melted butter, pepper and salt. Mix well.
- Next, add the thawed potatoes and shredded cheese in the bowl. Mix well.
- Once combined, transfer potato mixture evenly into a single layer in 9×12” baking sheet.
- In a ziplock bag, lightly crush cornflakes with hands or rolling pin.
- Add the remaining melted butter to the cereal. Mix well.
- Sprinkle evenly over the potatoes.
- Bake uncovered at 350 for 40-50 minutes.
