Fancy Spinach-Artichoke Fondue

FANCY SPINACH ARTICHOKE FONDUE
2 c. shredded fontina cheese
¼ c. shredded Asiago
1 T. cornstarch
2 T. butter
5 oz. frozen spinach, thawed and squeezed dry
1 T. minced garlic
1 t. red pepper flakes
1 t. anchovy paste
½ t. freshly grated nutmeg
½ c. dry white wine
½ c. chicken broth
4 oz. cream cheese, cubed and softened
½ c. chopped caned artichoke bottoms, drained
1 T. lemon juice
Salt/black pepper to taste
Crusty bread cubes or veggies, for dipping
- Toss together fontina, Asiago and cornstarch.
- Melt butter in saucepan over medium heat.
- Add spinach, garlic, pepper flakes, anchovy paste and nutmeg. Cook until garlic is softened, about 1-2 minutes.
- Add wine and broth. Bring to a simmer.
- Whisk in cheese mixture a handful at a time, letting each addition fully melt before adding the next.
- Whisk in cream cheese until melts.
- Stir in artichokes and lemon juice.
- Season and transfer to warm fondue pot.
