Today’s TIP-you can now have your breakfast, brunch, snack and favorite Mexican treats rolled into one. Use your favorite burrito toppings to make your meal. Cut an avocado in half, remove pit and scoop out about 1 T. of flesh from each half. Season with salt and pepper and nestle the halves cut-side up in a small pile of salt on a baking sheet so they won’t wobble. Crack an egg into each half (you do not want to use large eggs). Season with salt and pepper and bake at 425 until white is set, 15-18 minutes. Top with pico de gallo, crushed tortilla chips, minced jalapenos, dab of sour cream—any of your favorite toppings. So, satisfying!
