Ingredients
  • 1 can drained navy beans
  • Skim milk, regular milk or heavy cream
Instructions
  1. Prepare your White Beans and Rice recipe.
  2. With leftover white beans, take an immersion blender, food processor or blender and pulse until mixture is nice and thick.
  3. If you puree until all is done, you may want to add a can of drained navy beans to the pureed soup if you want some of the beans. You can also not puree all the way through so that you have some of original beans left. This is to fit your like for the soup.
  4. If you like to thin out your soup and make it go further, add some milk to it. Taste for seasoning.

Ingredients
  • 2 lb. bag dried navy beans
  • 1 (8-oz.) container Pico de Gallo
  • 8 oz. container of chopped onion mix
  • 3 bay leaves
  • 1 lb. sliced pickled pork meat
  • 1 lb. smoked hot or mild pork sausage
  • Salt (not too much since your meats have lots of salt)
  • Red/black pepper and garlic powder
  • Water
  • Cooked Rice
Instructions
  1. In large pot, place beans.
  2. Add the pico, onion, bay leaves, meats and seasoning to beans.
  3. Cover with water almost to top of pot. Make sure all is covered in water.
  4. Simmer on low heat and stir occasionally until beans become tender and dish thickens up somewhat.
  5. Taste for seasoning.
  6. Serve over hot steamed rice.

*****With leftover white beans, I place my immersion blender and make a nice white
