Beet and Spinach Salad with Fantastic House Dressing

  • 3 large red beets
  • 3 large orange or yellow beets
  • Bag of fresh baby spinach
  • Fresh crumbled feta cheese
  • Olive oil
  • Balsamic vinegar
  • Salt, black pepper
  • Fantastic House Dressing
  1. Clean beets. Take an aluminum pan and line with foil, enough to fold over.
  2. Place beets in pan, drizzle with olive oil, sea salt and black pepper.
  3. Seal with foil. Roast in 350 oven for 45 minutes or until tender.
  4. Remove from oven, cool, peel and slice.
  5. Season beets with more olive oil, salt, black pepper, garlic powder and a little balsamic vinegar. Chill until ready to assemble salad.

  7. To assemble: Place fresh spinach in a bowl. Season with salt and black pepper.
  8. Place seasoned spinach in serving dish.
  9. Place sliced roasted beets on top.
  10. Sprinkle feta cheese on top.
  11. Pour dressing or let guests take the salad they want and put their own dressing.

  • ⅔ c. olive oil
  • ½ c. canola or other healthy oil or all olive oil
  • ¼ c. white balsamic vinegar
  • ⅓ c. catsup
  • ¼ c. sugar or 1 packet of sugar substitute
  • Juice of 1 lemon
  • 2 T. minced red onion
  • 1 tsp. celery salt
  • ½ t. salt or more
  • 2 t. black pepper
  • 1 T. minced garlic
  1. Combine all ingredients and place in a jar that has a lid on it.
  2. Refrigerate 24 hours.
  3. Shake jar thoroughly when getting ready to use.
******I like this when we have fresh tomatoes. It is really good on assorted lettuces, spinach or any salads you may want. It is a little sweet but tangy. Very refreshing!
