Ultimate Egg-in-a-Nest BLT Sandwich

8 (1 oz.) whole wheat sourdough bread slices, lightly toasted
2 center cut bacon slices, diced
1 ripe avocado, mashed
Mayo or Miracle Whip
Kosher salt
4 eggs
Black pepper
8 Bibb lettuce leaves
8 tomato slices

  1. Using a 2 ½” round cookie cutter, cut a hole from center of 4 bread slices. Discard rounds or uses for another recipe.
  2. Heat large skillet over medium heat.
  3. Add bacon and cook until crispy. Drain on paper towel. Pour off drippings and reserve.
  4. Combine avocado, mayo (add 1 T. at a time, until you get consistency you like), salt and pepper. Add bacon and taste for any additional seasoning.
  5. Add ½ of bacon drippings into pan over medium heat.
  6. Place 2 cut bread slices in skillet.
  7. Break 1 egg into each hole. Sprinkle with salt and pepper. Cook 2 minutes or until eggs begin to set.
  8. Carefully turn bread and cook another 2 minutes or until eggs are set.
  9. Remove from pan and repeat with remaining bacon drippings, bread, and eggs.
  10. Spread avocado mixture evenly on 4 of the uncut bread slices.
  11. Top each with 2 lettuce leaves, 2 tomato slices and 1 egg-in-a-nest bread slice.
  12. Serve.
