Savory Greek Spinach Dip

Olive oil
¼ c. chopped shallots
4 green onions, chopped
1 T. minced garlic
12-oz. fresh baby spinach
Salt, black pepper
Zest of 1 lemon
Juice of 1 lemon
1 c. Greek yogurt
½ c. finely crumbled feta cheese
3 T. chopped fresh dill

  1. In large frying pan, drizzle oil to cover bottom and put over high heat.
  2. Add shallots, onions and garlic and cook for 1 minute, stir often.
  3. Add spinach and cook, stir often, until wilted, about 2-3 minutes.
  4. With slotted spoon, scoop spinach int food processor and pulse until roughly pureed, about 4-5 pulses.
  5. Add zest, lemon juice, yogurt, feta, dill and season with salt and pepper.
  6. Pulse just 1-2 times just to combine.
  7. Taste for seasoning.
    *Serve with warm pita bread or crispy veggies.
