Tasty Tuna Poke Nacho Salad

1 lb. sushi/sashimi-grade albacore or ahi tuna
2 T. fresh lime juice
½ c. finely chopped red onion
1 T. soy sauce
Sea salt, black pepper
¾ c. Miracle Whip or mayo
2-3 T. Sriracha
16 oz. favorite tortilla chips
6 radishes, thinly sliced
1 avocado, thinly sliced
2 large jalapenos, seeded, sliced into rings
½ c. chopped cilantro or parsley
2 limes cut into wedges

  1. Cut the tuna into ½” pieces.
  2. In a bowl, combine the tuna, onion, lime juice and soy sauce. Season with salt and pepper.
  3. In another bowl, whisk mayo with Sriracha (depending on how hot you like your seasoning, the Sriracha will vary).
  4. Spread half of the chips on a large platter.
  5. Scatter half of the tuna mixture over the chips.
  6. Top with half of radishes, avocado, jalapeno and cilantro.
  7. Drizzle with half of the Sriracha mayo sauce.
  8. Repeat with the remaining ingredients.
  9. Serve with lime wedges.
