Tasty Tuna Poke Nacho Salad

1 lb. sushi/sashimi-grade albacore or ahi tuna
2 T. fresh lime juice
½ c. finely chopped red onion
1 T. soy sauce
Sea salt, black pepper
¾ c. Miracle Whip or mayo
2-3 T. Sriracha
16 oz. favorite tortilla chips
6 radishes, thinly sliced
1 avocado, thinly sliced
2 large jalapenos, seeded, sliced into rings
½ c. chopped cilantro or parsley
2 limes cut into wedges
- Cut the tuna into ½” pieces.
- In a bowl, combine the tuna, onion, lime juice and soy sauce. Season with salt and pepper.
- In another bowl, whisk mayo with Sriracha (depending on how hot you like your seasoning, the Sriracha will vary).
- Spread half of the chips on a large platter.
- Scatter half of the tuna mixture over the chips.
- Top with half of radishes, avocado, jalapeno and cilantro.
- Drizzle with half of the Sriracha mayo sauce.
- Repeat with the remaining ingredients.
- Serve with lime wedges.
