TASTY BLT MACARONI SALAD
½ c. Miracle whip or mayo
½ c. sour cream or Greek yogurt
¼ c. chopped fresh basil
Zest of 1 lemon
Juice of 1 lemon
Kosher salt, black pepper, to taste
1 t. minced garlic
1 (16-oz.) pkg. elbow macaroni, cook according to package directions
1 (16-oz.) pkg. thick-cut bacon, chopped and cooked
3 c. chopped fresh tomatoes
1 (6-oz.) bag fresh baby spinach
- In large bowl, whisk together mayo, sour cream, basil, zest and lemon juice, until smooth. Season with salt and pepper.
- Stir in cooked pasta, bacon and tomatoes.
- Taste for seasoning.
- Cover and refrigerate for 2-3 hours or overnight.
- Stir in spinach and taste for seasoning. Serve.
