Sweet and Sour Slaw

SWEET AND SOUR SLAW
1 lb. bag slaw mix
3 celery stalks, thinly sliced
1 red onion, diced
1 green, orange, red bell pepper, seeded and diced
1 jalapeno, seeded and diced
½ c. Jalapeno Sweet Spicy Relish
½ c. sugar
½ c. olive oil
½ c. cider vinegar
½ c. champagne vinegar
1 T. Creole mustard
1 T. celery seeds
Salt/black pepper to taste
- In large bowl, combine cabbage, celery, onion, bell peppers, jalapenos, jalapeno relish, and sugar. Toss to mix and set aside.
- In saucepan over medium heat, combine oil, vinegars, salt and pepper, mustard and celery seeds. Stir to mix well.
- Pour over cabbage mixture and toss to mix well.
- Cover and refrigerate overnight, stir from time to time. Taste for seasoning.
