Super Easy Crock-Pot Taco Soup

1 yellow onion, diced
2 T. olive oil
2 T. minced garlic
1 (28-oz.) can corn, drained
1 (28-oz.) can black beans, drained and rinsed
1 (28-oz.) can Rotel or diced tomatoes
3 c. water
1 packet dried Ranch dressing seasoning
Salt/black pepper to taste
1 t. cumin
2 T. chili powder
¼ c. chopped cilantro
2 lbs. ground beef or turkey or chicken
Toppings: grated cheese, sour cream, fresh avocado slices, tortilla chips, pico

  1. In large saucepan, heat olive oil and saute garlic and onion.
  2. Add beef and brown until cooked through.
  3. Drain beef mixture and add to crockpot.
  4. Add corn, beans, Rotel and water to crockpot. Mix well.
  5. Add salt, pepper, cumin, chili powder, cilantro and Ranch dressing packet. Mix well.
  6. Heat on LOW for 4-6 hours.
  7. Serve with toppings.
