Spectacular Pork Medallions with Magic Green Sauce

1 small jar capers
1 c. packed chopped fresh cilantro
¼ c. olive oil, divided
1 T. water
2 bunches green onions, divided
4 (4-oz.) boneless center-cut loin pork chops
Salt/black pepper
14 red and yellow cherry tomatoes, halved

  1. Spoon 1 T. caper juice and 2 T. drained capers into a bowl of a mini-food processor.
  2. Add cilantro, 3 T. oil and 1 T. water. Chop green onions to measure 3 T. Add the green onions to the cilantro mixture and process until smooth.
  3. Cut remaining green onions diagonally into 2” pieces. Cut 8 pieces lengthwise into slivers and set aside.
  4. Heat large skillet over medium heat
  5. Season pork chops with salt and pepper.
  6. Add remaining olive oil to skillet, swirl to coat.
  7. Add pork and 2” onion pieces. Cover and cook 3-4 minutes.
  8. Turn pork over. Add tomatoes and cook 2 minutes.
  9. Season with more salt and pepper.
  10. Arrange pork mixture on a platter.
  11. Drizzle with sauce and sprinkle with slivered onions.
