Simple Pasta Carbonara
SIMPLE PASTA CARBONARA
12 oz. spaghetti
Kosher salt
3 eggs
1 c. freshly grated Parmesan
8 slices bacon
2 T. minced garlic
Fresh ground black pepper
Extra virgin olive oil, garnish
Sea salt, garnish
Fresh chopped parsley or basil, garnish
- In large pot of salted boiling water, cook pasta according to package directions until al dente.
- Drain and save 1 c. pasta water.
- In bowl, whisk eggs and Parmesan until combined
- In large skillet over medium heat, cook bacon until crispy. Reserve bacon fat and drain bacon on paper towel. Crumble bacon.
- In same skillet, add garlic and cook 1 minute.
- Add cooked pasta and toss until fully coated with bacon fat. Remove from heat.
- Pour over egg and cheese mixture and stir vigorously until creamy (careful not to scramble eggs.)
- Add pasta water a few tablespoons at a time to loosen sauce if necessary.
- Season generously with salt, pepper and cooked bacon.
- Drizzle with olive oil and garnish with sea salt, Parmesan and parsley or basil before serving.
