Simple Pasta Carbonara

SIMPLE PASTA CARBONARA
12 oz. spaghetti
Kosher salt
3 eggs
1 c. freshly grated Parmesan
8 slices bacon
2 T. minced garlic
Fresh ground black pepper
Extra virgin olive oil, garnish
Sea salt, garnish
Fresh chopped parsley or basil, garnish

  1. In large pot of salted boiling water, cook pasta according to package directions until al dente.
  2. Drain and save 1 c. pasta water.
  3. In bowl, whisk eggs and Parmesan until combined
  4. In large skillet over medium heat, cook bacon until crispy. Reserve bacon fat and drain bacon on paper towel. Crumble bacon.
  5. In same skillet, add garlic and cook 1 minute.
  6. Add cooked pasta and toss until fully coated with bacon fat. Remove from heat.
  7. Pour over egg and cheese mixture and stir vigorously until creamy (careful not to scramble eggs.)
  8. Add pasta water a few tablespoons at a time to loosen sauce if necessary.
  9. Season generously with salt, pepper and cooked bacon.
  10. Drizzle with olive oil and garnish with sea salt, Parmesan and parsley or basil before serving.
