Astounding Spanish Mushrooms

ASTOUNDING SPANISH MUSHROOMS
¼ c. extra virgin olive oil
10 large button mushrooms, quartered
¼ c. minced garlic
2 T. lemon juice
2 T. dry sherry
1 t. Spanish paprika
Sea salt/black pepper to taste
½ t. dried chili flakes
¼ c. finely chopped fresh parsley

  1. In a large skillet, place over medium heat and add olive oil.
  2. Add mushrooms and saute for 3-4 minutes or just until tender.
  3. Add garlic, lemon juice, sherry, paprika, salt, pepper and chili flakes.
  4. Stirring, until mushrooms are completely tender, about 5 minutes.
  5. Remove from heat and stir in parsley.
