SHRIMP ARNAUD
6-8 c. cleaned and boiled shrimp
3 c. olive oil
1 c. vinegar
1 jar capers, drained
2 c. finely chopped celery
1 ½ c. creole mustard
½ c. grated Vidalia onion
½ c. finely chopped parsley
½ c. finely chopped green bell pepper
Salt to taste
Tabasco to taste
½ c. paprika
Cole slaw or lettuce leaves
- Mix all the ingredients except shrimp for the dressing.
- Add the shrimp to the dressing and marinate for 24 hours.
- Serve on a bed of cole slaw or lettuce leaves.
