Sensational Spicy Shrimp

SENSATIONAL SPICY SHRIMP
2 lbs. peeled shrimp
2 banana peppers, seeded and cut into slices
2 jalapeno peppers, seeded and cut into slices
2 of each color mini peppers (red, yellow, orange, green), seeded and cut into slices
4 garlic heads, roasted
1 c. chopped onion
¼ c. olive oil
¼ c. lemon zest flavored butter
¼ c. garlic flavored butter
½ c. white wine
¼ c. fresh lemon juice
1 (8-oz.) carton sliced mushrooms
1 (8-oz.) container pico de gallo
Tabasco to taste
Chopped green onions
Salt, red/black pepper, garlic powder
Hot French bread for dipping

  1. Preheat oven 350. Take garlic heads and shave off the top to expose the cloves. Place in an oven-proof dish. Drizzle with olive oil and season with salt and pepper. Cover with foil and bake in oven for 30-45 minutes. Remove from oven, uncover and let cool. Set aside.
  2. In large saute pan or skillet, heat oil and flavored butters.
  3. Saute the peppers and onions, for about 3 minutes.
  4. Add the seasoned shrimp and cook for about 2 minutes.
  5. Squeeze the roasted garlic pods into the dish.
  6. Add the wine, lemon juice, mushrooms, pico. Mix well.
  7. Remove from heat.
  8. Season with salt, pepper and Tabasco. Mix well.
  9. When ready to serve, place in 400 degree oven and cook until it bubbles. Stir once.
  10. Garnish with chopped green onions.
  11. Serve with hot French bread for dipping.
    *You can just leave in skillet and do the whole cooking in this. You can also add this dish to pasta. There will be quite a bit of liquid so you might want to strain and reserve the liquid. Add the liquid to the shrimp mixture and pasta as needed. You can also add crabmeat.
