Refreshing Watermelon-Tomato Salad

REFRESHING WATERMELON-TOMATO SALAD
1 c. thinly sliced red onion
2 T. white vinegar
1 T. vegetable oil
1 t. sugar
Kosher salt, black pepper
1 (8-oz.) log goat cheese, softened
2 T. milk
3 T. chopped fresh dill, divided
Zest of 1 lemon
Juice of 1 lemon
4 c. thinly sliced watermelon, rind removed
2 lbs. assorted fresh tomatoes, sliced
2 small cucumbers, halved, sliced crosswise
¼ c. lightly packed fresh mint leaves, rough chop

  1. In bowl, stir together onion, vinegar, oil, sugar, salt and pepper. Cover and refrigerate for about 4 hours, until onions soften.
  2. In another bowl, whisk together goat cheese, milk, 1 T. dill, lemon zest/juice, salt and pepper until smooth and creamy.
  3. On large platter, arrange watermelon, tomato and cucumber, sprinkle with some salt and pepper.
  4. Top with onion mixture. Spoon goat cheese mixture on top.
  5. Sprinkle with mint, remaining dill and any additional salt and pepper if needed. Serve immediately.
