Refreshing Fried Green Tomato Caprese
REFRESHING FIRED GREEN TOMATO CAPRESE
Vegetable oil, for frying
½ c. flour
Salt and black pepper to taste
3 eggs
1 ½ c. panko breadcrumbs
3 large green tomatoes, cut into ¼” thickness
Flaky sea salt and black pepper
12 oz. fresh mozzarella, thickly sliced
¼ c. balsamic glaze
Large bunch of fresh basil leaves
- Add an inch of oil to skillet and heat to 350.
- Mix flour, salt, black pepper in shallow dish.
- Add eggs to second shallow dish and beat.
- Add panko to third shallow dish.
- Dredge a few slices of tomatoes into seasoned flour, then dip in egg and lastly in panko.
- Set aside on place and repeat with all tomato slices.
- Fry tomatoes in batches until golden and crispy, 2 minutes per batch.
- Drain on paper towels and sprinkle with flaky sea salt and pepper.
- ASSEMBLE: Arrange tomatoes and mozzarella on platter, alternating between the two.
- Drizzle over with balsamic glaze and sprinkle with basil leaves.
