Refreshing Fried Green Tomato Caprese

REFRESHING FIRED GREEN TOMATO CAPRESE
Vegetable oil, for frying
½ c. flour
Salt and black pepper to taste
3 eggs
1 ½ c. panko breadcrumbs
3 large green tomatoes, cut into ¼” thickness
Flaky sea salt and black pepper
12 oz. fresh mozzarella, thickly sliced
¼ c. balsamic glaze
Large bunch of fresh basil leaves

  1. Add an inch of oil to skillet and heat to 350.
  2. Mix flour, salt, black pepper in shallow dish.
  3. Add eggs to second shallow dish and beat.
  4. Add panko to third shallow dish.
  5. Dredge a few slices of tomatoes into seasoned flour, then dip in egg and lastly in panko.
  6. Set aside on place and repeat with all tomato slices.
  7. Fry tomatoes in batches until golden and crispy, 2 minutes per batch.
  8. Drain on paper towels and sprinkle with flaky sea salt and pepper.
  9. ASSEMBLE: Arrange tomatoes and mozzarella on platter, alternating between the two.
  10. Drizzle over with balsamic glaze and sprinkle with basil leaves.
