Ingredients
  • 8 Persian or English cucumbers (thin skinned types), chopped
  • 2 c. mint leaves
  • 1 ½ c. fresh lemon juice
  • ½ c. agave nectar
  • 1 T. Matcha Green Tea Powder
  • Kosher salt
  • Ice
Instructions
  1. In bowl, toss cucumbers with mint leaves.
  2. Transfer to blender or food processor and puree until chunky.
  3. In large pitcher, combine lemon juice, agave and Matcha powder with 5 c. of ice water.
  4. With blender or processor running, add half of lemon mixture to the puree and blend until very smooth.
  5. Transfer to a punch bowl.
  6. Blend the remaining cucumber, mint and lemon mixture until very smooth and transfer to punch bowl.
  7. Season drink slightly with salt and serve in ice-filled glasses.
