Refreshing Emerald Palmers
- 8 Persian or English cucumbers (thin skinned types), chopped
- 2 c. mint leaves
- 1 ½ c. fresh lemon juice
- ½ c. agave nectar
- 1 T. Matcha Green Tea Powder
- Kosher salt
- Ice
- In bowl, toss cucumbers with mint leaves.
- Transfer to blender or food processor and puree until chunky.
- In large pitcher, combine lemon juice, agave and Matcha powder with 5 c. of ice water.
- With blender or processor running, add half of lemon mixture to the puree and blend until very smooth.
- Transfer to a punch bowl.
- Blend the remaining cucumber, mint and lemon mixture until very smooth and transfer to punch bowl.
- Season drink slightly with salt and serve in ice-filled glasses.
