No-Bake Peanut Butter Bars

2 c. semi-sweet chocolate chips
½ c. creamy peanut butter
2 sticks butter, softened (more for greasing pan)
1 c. chunky peanut butter
2 c. powdered sugar
1 (12-oz.) box vanilla wafers
1 (12-oz.) bag semi-sweet mini chocolate chips
½ c. chopped peanuts

  1. TOPPING: Using double boiler or microwave, melt chocolate chips and creamy peanut butter. Let cool a few minutes while you make the bars.
  2. BARS: Grease 9×13” pan with butter. Using hand mixer, mix together butter and chunky peanut butter until smooth. Stir in powdered sugar, a cup at a time.
  3. Add wafers to food processor and process until they are crumbs.
  4. Add crumbs and mini chips to peanut butter mixture and mix until just combined.
  5. Spread evenly into buttered pan and set aside.
  6. Pour topping over base. Spread out evenly and sprinkle with chopped peanuts.
  7. Refrigerate for at least 1 hour. Cut into 20 bars.
  8. Keep refrigerated. Bars softened at room temp.
