Mustard Grilled Stuffed Pork Loin Chops with Two Tomato Salsa
4 boneless stuffed pork loin chops, seasoned
1 c. diced plum tomatoes
8 sun-dried tomato halves packed in oil, drained and chopped
¼ c. chopped fresh basil or 1 T. dried basil
1 t. cayenne flakes
½ c. Dijon mustard
¼ c. honey
1 T. minced garlic
½ c. fruit preserves (I like to use fig but use any type you like or leave out.)
Fresh chopped parsley, garnish
- In medium bowl, combine the tomatoes, basil and cayenne. Set aside.
- In small bowl, combine mustard, honey, garlic and fruit preserve. Mix well.
- Season chops. These are stuffed with bell peppers and garlic but you can have them stuffed with sausage, etc.
- Place chops in Ziploc bag and pour the mustard mixture in and let marinade overnite or for 2-3 hours.
- In a bowl, combine the sun-dried tomato halves with the diced can of plum tomatoes. Add the basil and taste for seasoning. Set aside.
- Place chops in covered type grill directly over medium hot heat. Lower grill and grill 3-4 minutes on each side or until you get temperature you like. You can also do in grill pan in oven. Place in 400 degree oven and place pan in and turn chops to brown each side.
- Serve with tomato salsa and garnish with chopped parsley.
