Lemony Salmon with Whole Wheat Pasta

LEMONY SALMON WITH WHOLE WHEAT PASTA
½ lb. whole-wheat spaghetti or your favorite pasta
1 T. minced garlic
Olive oil
Salt, black pepper
4 (4-oz.) pieces salmon
¼ c. chopped fresh basil leaves
¼ c. capers, drained
Zest of 1 lemon
¼ c. fresh lemon juice
2 c. fresh baby spinach

  1. Boil pasta in salted water, following directions on package. Drain and transfer to a large bowl.
  2. Add the garlic, about 2-3 T. olive oil, salt and pepper. Toss to combine.
  3. In a medium skillet warm enough olive oil to cover the bottom over medium heat.
  4. Season salmon with salt and pepper.
  5. Add fish to skillet and cook until medium-rare, about 2-3 minutes per side, depending on thickness of fish.
  6. Remove fish from pan.
  7. To the pasta, add basil, capers, zest and lemon juice and toss to combine.
  8. Place out 4 serving dishes or bowls.
  9. Place ½ c. of spinach in each bowl.
  10. Top with ¼ of the pasta and then top with the salmon.
  11. Serve immediately.
