Impressive Loaded Totchos

  • 1 lb. bag of frozen tater tots
    2 ripe avocados, halved
    4 fresh tomatillos, husks, removed, halved
    ¼ c. cilantro
    ½ c. fresh lime juice
    1 t. ground cumin
    1 T. Kosher salt, divided
    1 t. ancho chile powder
    3 c. rotisserie chicken, shredded
    4 slices cooked bacon, chopped
    1 (8-oz.) container white cheese dip, warmed
    2 c. charred corn kernels
    1/3 c. diced tomato
    2-3 fresh jalapenos, seeded, thinly sliced
    Garnishes, sour cream, salsa, etc.

    1. Cook tater tots according to pkg. directions.
    2. Process avocado, tomatillos, cilantro, lime juice, cumin and 1 t. salt in blender or food processor, until smooth. Stopping to scrape sides.
    3. Stir together ancho chile powder and 1 t. salt in small bowl.
    4. Sprinkle this over the hot potato tots.
    5. Top the tots with shredded chicken and chopped bacon.
    6. Drizzle with warm cheese dip and avocado mixture.
    7. Top evenly with corn, tomato and jalapeno slices.
    8. Serve immediately.
