Hearty Golden Mashed Potatoes
4 lbs. large golden Yukon gold potatoes, peeled and cubed
1 lb. carrots, peeled and cut into ½” chunks
8 green onions, thinly sliced
1 c. sour cream
½ c. butter
Salt, black pepper
1 c. shredded cheddar cheese
Paprika
1. In Dutch oven, cook potatoes and carrots in boiling salted water until tender. Drain.
2. Place in bowl and mash and set aside.
3. In skillet, saute onions in butter until tender.
4. Add to potato mixture.
5. Add sour cream and season to taste. Mix until blended
6. Transfer to 13×9” baking dish that is greased.
7. Sprinkle with cheese and paprika.
8. Bake uncovered at 350 for 30 minutes or until heated through and cheese is melted.
