Healthy Herb Roasted Carrots

Olive oil spray
2 lbs. fresh carrots (peeled and cut into ½” pieces at an angle (about 6 cups)
2 T. extra virgin olive oil
1 T. fresh minced thyme leaves
¼ c. fresh Italian parsley, plus more to garnish
2 T. minced garlic
Kosher salt/black pepper to taste

  1. Preheat oven 400. Spray large baking sheet with olive oil spray.
  2. In large bowl, toss carrots with olive oil.
  3. Add herbs, garlic, salt and pepper to taste and toss evenly to coat.
  4. Spread mixture in even layer on pan and roast in oven 35-38 minutes, tossing every 10 minutes until carrots are browned on edges and tender.
  5. Transfer to serving platter and garnish with fresh parsley.
